Supermarket tea is blended from many estates and stored until it sells. Ours is one district, mostly one estate, packed to order after each flush and sealed with the date it was made. You are tasting a season, not a backlog.

Measure the leaf

One teaspoon per cup into a simple infuser. You control the strength, not a bag.

Black teas near boiling; green and white cooler. The pack tells you the temperature.

Time the steep

Three to four minutes for black, less for green. Then taste, and steep again.
